Description

A Hawthorne strainer is the strainer most bartenders reach for by default: a flat, round disc with a coiled spring around the edge that flexes to seal against the rim of a shaker tin, and prongs or a tail to hook it in place. Hold it against the tin with your index finger controlling the spring, tip, and pour — the spring catches ice while the drink runs through.

If you're only going to own one strainer, this is the one to get. It works well on tins and, held against a mixing glass, does a perfectly good job on stirred drinks too, even though a julep strainer is the traditional choice there. It still lets fine ice chips and small bits of muddled fruit or herb through, so for a completely clear drink you'll want to pour a second time through a fine mesh strainer. For everyday shaking, it's the standard tool for good reason.

Is a Hawthorne strainer enough on its own, or do I need other strainers too?

For most home use, yes, a Hawthorne strainer on its own covers shaken and stirred drinks. It won't catch every fine ice chip or bit of muddled fruit, so add a fine mesh strainer to your kit if you want silky-clear drinks or make a lot of drinks with muddled ingredients. A julep strainer is a nice-to-have for stirred drinks but not essential once you already own a Hawthorne strainer to fall back on.

Will a Hawthorne strainer fit any shaker tin or mixing glass?

The coiled spring is designed to flex and seal against a range of rim sizes, so it fits the vast majority of standard shaker tins and mixing glasses without any trouble. A very large or unusually shaped rim can occasionally be a looser fit, in which case hold the strainer at a slight angle and control the gap with your index finger rather than relying on the spring to seal completely on its own.
