Beyond that, display is straightforwardly commercial u2014 most people order what they can see, and a guest line with nothing telling anyone it is on will sell a fraction of what it could.

Chalk boards suit anything that changes and acrylic holders suit anything that does not. A rotating guest ale wants a board somebody can rewrite in seconds; a fixed price list wants something printed that stays legible and clean.

What to know

Whatever it is, it has to be readable from where the customer stands, in the light the room actually has. A beautifully written board in a dim corner sells nothing.
