Description

This is a small conical mesh sieve for double straining: hold it over the glass while you pour a drink through your Hawthorne or julep strainer, and it catches the fine ice shards, herb fragments, seeds and pulp that a normal strainer lets through. It's a second step, not a replacement for a Hawthorne or julep strainer, which do the job of holding back the ice itself.

You won't need it for every drink. A simple two-ingredient drink shaken over clean ice cubes comes out clear enough without it. Where it earns its place is anything muddled — mint, berries, citrus with pulp — or drinks finished with egg white, where you want a smooth texture rather than flecks of herb or seed in the glass. At 8cm it's a manageable size to hold one-handed over a coupe or rocks glass. It's inexpensive enough that most people who shake regularly keep one to hand for when a drink calls for it.

Questions about this product

Do I need to double strain every cocktail?

No. A simple shaken or stirred drink made with clear spirits and standard ice comes out clear through a Hawthorne or julep strainer alone. Double straining through a fine mesh strainer matters more for drinks with muddled fruit, fresh herbs, citrus pulp, or egg white, where you're trying to avoid flecks of solid material in the finished glass. It's an extra step for a cleaner result, not a mandatory one for every drink you make.

What size conical strainer should I buy?

8cm across the top is a practical, versatile size for most home and bar use u2014 it comfortably covers coupes, rocks glasses and Martini glasses without needing to hold it far above the rim. A larger strainer is easier to hold steady over a wide glass but overhangs a small one awkwardly; a smaller strainer is fiddlier to pour into accurately. If you're only buying one size to start with, 8cm is the sensible middle ground.
